pumpkin roll with spiced pecan cream cheese filling


well, first of all, no baking
can begin without a cup
of joe.
ok...caffeine is starting to kick in. Wait, what am I making? Oh, right...pumpkin rolls. Alright, got my pumpkin. Whole Foods had a sale on pumpkin...only a buck for this can! Yipee!
OK....we have all our wet ingredient mixed together and poured into the jellyroll pan. Hard to believe this is going to be a big beautiful roll, isn't it? Well, BELIEVE IT!! ha!


Here she is, all rolled up! The inside is a mix of cream cheese, sugar and toasted pecans....



Make sure it's nice and cool before you roll 'er up! If you don't it will tear and you'll have to throw the whole gosh durn thing away. And it sucks. Trust me, I've had to do it.



The final product.....TA DA! Just sprinkled some powdered sugar on top of the toasted pecans, and you have a delicious Thanksgiving day dessert know one will forget!

Here is my 5 layered devils food and cheesecake-cake! A friend said it reminded him of "where the wild things are"...maybe because of the crazy chocolate sticks surrounding it? I had attempted to make chocolate curls, but ended up with sticks. I thought it made it look interesting, at least....

Cherry Garcia Cookies!


The hippie in me came out today to bake! Cherry Garcia cookies were the first thing I thought of when I woke up this morning. Need dark chocolate. Need white chocolate. Need cherries. Need COOKIES!! (Yes, I am STILL pregnant!! In case you haven't been able to tell!!)

Chocolate Caramel Apples!


Autumn is finally here...my favorite season! One of the first things on my mind...apples! I got some delicious Cortland apples from Flaherety Family Farm in Scarborough. Dipped in caramel and drizzled in chocolate and covered in toasted walnuts....could fall get any better? Maybe...but for now...it's quite perfect :)

Coconut-Lime Cupcakes!


I love cupcakes that look like little pieces of art. These ones are adorable...little tropical coconut and lime flowers! Topped with a fresh blackberry. Love it!

Vegan Cupcakes!


I have a number of friends who are vegetarian/vegan...and I know it's hard to find a nice dessert that doesn't have eggs or milk. Here we have dairy-free vegan cupcakes. Maple cupcakes, with creamy maple frosting and candied walnuts, to be specific. I have a neat-o square cupcake pan I used to get the unique square shapes. Vegans....INDULGE!!

White Chocolate Raspberry Cheesecake


White chocolate raspberry cheesecake. White chocolate is melted and mixed in the batter, and a tangy raspberry sauce is drizzled over the finished cake.

A couple of weeks ago, a friend asked me to make her a cake for a wedding. The wedding was going to be small, she said. Something fruity, something that would go nicely with brunch. Hmmmm....how about a fresh fruit tart? Perfect!
